Blueberry Coconut Oat Cookies

Y’all know I love this banana oat base for cookies, but I tried a new combo and I’m in love… and so is Char! ??? This is a simple recipe so let’s just get straight to it!

DIRECTIONS:

-Preheat oven to 325 degrees F

In your kitchen aid or hand mixer, combine:

-2 ripe bananas

-1.5 cups of old fashioned oats

-1 tsp of cinnamon

-2 tsps of nut butter

-1 tsp of maple syrup

-1/3 cup of shredded coconut

-1/3 cup of dark chocolate chips

-After well combined, fold in 1/3 cup of fresh or frozen blueberries

-Scoop onto a greased baking pan (I like to use this reusable mat)

-Top with additional shredded coconut

-Bake for 12 minutes

-Let cool + enjoy!

These cookies are perfect for anytime of day… you can even get away with having one for breakfast! ??

Okay, this was my FIRST time baking with Tahini + I am more than impressed. Some of you may be asking, “what the heck is tahini?” So let’s cover the basics and then we’ll dive into this yummy recipe 🙂

Tahini is a paste made from toasted, ground sesame seeds. It has a light, nutty flavor. It’s best known as an ingredient in hummus but widely used in many dishes around the world, particularly in Mediterranean and Asian cuisine. Aside from its culinary uses, tahini offers several health benefits.”

So, hopefully now you have an idea of just how amazing tahini is for you! Although tahini is primarily used in hummus, it also makes for a great swap when baking with peanut butter! Which leads us to my ALMOND FLOUR TAHINI COOKIES!

To make this recipe VEGAN:
sub the egg for a flax egg or 2 tbsps of maple syrup + use Enjoy Life Foods chocolate chips.
